COCONUT MILK KEFIR

There are two types of Kefir grains - milk kefir grains and water kefir grains. You will need to use Milk Kefir Grains for this recipe. This is such a great way to get beneficial probiotics from Kefir if you are Vegan or on a diet that does not allow for dairy.

INGREDIENTS:
 DAIRY KEFIR GRAINS
 COCONUT MILK (from a carton* or canned**)
 DATES OR RAW SUGAR (optional)
INSTRUCTIONS:

Pour the coconut milk into a quart-sized mason jar and stir with a wooden spoon until it is even consistency. Leave about 2 inches of headroom.

If you choose to add the date or raw sugar, now is the time. Stir until it is well blended.

Once it is mixed, add in the grains.

Place plastic lid or coffee filter with a rubber band over the jar

Put the jar in the corner of your kitchen countertop or in a cupboard. Let it sit out of direct sunlight for approximately 18 to 24 hours at room temperature 70-80⁰F.

After 24 hours, remove the kefir grains.

To remove the grains, place the strainer over another quart-sized mason jar

Pour the finished Kefir through the strainer to separate/capture the grains

Place the Kefir Grains into another clean quart-sized mason jar

Repeat the process for another batch.

HELPFUL HINTS: 

  • *If using coconut milk from a carton, just know that the end product will be a lot thinner than regular milk kefir. That’s normal.
  • **Please note that canned coconut milk comes separated in solid and liquid form (depending on the temperature of your home). Be sure to mix it very well before adding it to the mason jar with grains.  
  • Milk kefir grains can be used to make coconut milk kefir, however, because kefir grains feed on lactose (milk sugars), it is important to have them in cow’s milk every few batches so they can thrive.
  • Since there is little to no sugar in coconut milk, some folks think it would help the kefir grains create a more active probiotic drink if it has sugars to feed on. I have not noticed a difference either way, but if you want to give it a try, add a pitted date or 1 teaspoon of raw sugar and see if you get a fizzier beverage.
