Fermented Green Beans

 ½ lb Fresh green beans
 2 garlic cloves
 Fresh dill (a small handful)
 1 tbsp salt
 Filtered water
INSTRUCTIONS:

Wash and trim the ends of the fresh green beans.

Place green beans, 2 garlic cloves, and a small handful of fresh dill in a quart-sized wide-mouth mason jar.

Dissolve salt in filtered water to create a brine. Pour the brine over the green bean mixture, leaving some space at the top.

Use a glass weight (pickle pebble) to keep the green beans submerged. Attach an airlock to the jar.

Allow the mixture to ferment at room temperature for 3-4 days or until you observe bubbling.

Once fermented, remove the weight, seal the jar, and store it in the refrigerator. The cold storage will slow down the fermentation process.
