COCONUT MILK KEFIR

INGREDIENTS:
 DAIRY KEFIR GRAINS
 COCONUT MILK (from a carton* or canned**)
 DATES OR RAW SUGAR (optional)
INSTRUCTIONS:

Pour the coconut milk into a quart-sized mason jar and stir with a wooden spoon until it is even consistency. Leave about 2 inches of headroom.

If you choose to add the date or raw sugar, now is the time. Stir until it is well blended.

Once it is mixed, add in the grains.

Place plastic lid or coffee filter with a rubber band over the jar

Put the jar in the corner of your kitchen countertop or in a cupboard. Let it sit out of direct sunlight for approximately 18 to 24 hours at room temperature 70-80⁰F.

After 24 hours, remove the kefir grains.

To remove the grains, place the strainer over another quart-sized mason jar

Pour the finished Kefir through the strainer to separate/capture the grains

Place the Kefir Grains into another clean quart-sized mason jar

Repeat the process for another batch.
